Some people can just "drop meat" and go vegetarian but for others like myself, it's a little harder. I'm am still not 100% vegetarian but for the last couple of years I have eaten less and less of it and incorporated a lot more meatless dishes into my diet. Everytime I read a book like "Skinny *****" or watch a movie like "Sweeney Todd" it makes me want to eat meat that much less. Finding what works best for you is half the battle. Good luck.
